This casserole is ultra easy! I mean it, I have no idea how anyone would mess this up. I’ve changed it up and added broccoli or peas, even chopped up celery with the onions. You can add sour cream if you want, you can even mix up the soups. Don’t have beef on hand? Not a problem, use either turkey or chicken. It’s the go to casserole for leftovers and a no fuss what so ever kinda recipe you don’t want to lose. My kids like this no matter how I make it, and that’s a winner right there.
Ingredients
1 tablespoon oil
1 onion chopped
1lb ground beef
1 package of wide egg noodles (16 ounces)
1 cup or one can of mushrooms (rinsed and drained)
1 can of condensed cream of mushroom soup (or any other condensed soup you have on hand)
1 cup of milk
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
*if your adding in vegetables you can use frozen easily. Add it into the baking dish before you put it in the oven. Two cups of your choice is great, but add more to your liking. Broccoli and peas work really great in this dish.
Directions
Preheat the oven to 375F. Spray a 3 quart casserole dish with cooking spray.
Heat oil over medium head in a large skillet and saute onion just until see through but not browned. Add in the ground beef and cook till browned. Meanwhile cook the noodles as directed. Drain them and set in the casserole dish.
Add the soup milk, salt and pepper to the beef and mix. Place into the dish with the noodles and mix up. Cover with foil and bake about 25 minutes or until completely heated through and beef is cooked.

I made this for dinner tonight for my boyfriend and I, and it was delicious!!! I used cream of mushroom and chicken soup. And we also have tons of leftovers. It was way too much for 2 people. But SO good. Can’t wait to have it again tomorrow.

I made this tonight for dinner and it was delicious! I made a few changes…. I used 2 lbs. ground beef and added 1 can cream of potato soup, 1 pkg McCormick Au Jus, 1 package if fresh mushrooms and increased milk to 2 cups! I also used bow tie pasta because I didn’t have egg noodles.
