Yummy Pumpkin & Spinach Quiche Recipe
crust Ingredients:1 1/2 C. white wheat flour
1/2 t. salt
2 T. 2 % milk
1/2 C. oil
crust prep:
• Combine ingredients into pie pan, sifting in the flour and salt.
• mix together with a fork.
• mold into the pie pan pressing with your fingers all the way to the edges.
filling ingredients:
4 eggs
1 1/2 C. milk
1/2 t. salt
1/2 t. pepper
1/2 t. chili flakes
3/4 t. garlic salt
1 C. baby spinach
1 C. roasted pumpkin chopped into bite size pieces (i just roasted some left over pumpkin until it was soft in a little oil at 375 degrees)
filling prep:
• Combine ingredients into one bowl and beat with a fork for 30 seconds.
• pour into pie pan and bake for 40-45 minutes or until the center is set nicely.
serve hot or at room temp. anytime of the day!
