My favorite thing about this bread is, it’s diabetic friendly. There’s no added sugar to this, the sweetness comes from 1/4 cup apple juice, and the apple itself. Other Apple breads usually ask for a whole cup of sugar! We can all use a little less sugar in our day, so this is a wonderful bread to make. It’s delicious and quick. You can also add chopped up pecans, or walnuts to this if you wanted (about 1/4 cup) .

Ingredients for Apple Bread
1/4 cup raisins
1 egg
2 tablespoons vegetable oil
1/2 cup white flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup unsweetened apple juice
2 apples peeled and chopped.
Directions
Preheat oven to 350.
Soak the raisins in some hot water for about 5 minutes or until they are soft. Drain them and set aside. Beat the egg with the oil. In a separate bowl mix the flours, baking powder, baking soda, cinnamon and salt. Add a small amount of the flour in with the oil and egg mixture. Stir till just moistened. Add apple juice and remaining flour mixture and blend well. Add apples and raisins.Spoon batter in a 9×5 greased loaf pan for about 45 minutes or until a toothpick inserted in center comes out clean. Serve warm but let stand at least five minutes before slicing. Enjoy!
