Vegetable Bake Recipe

Here’s a great summer veggie dish-

Vegetable Bake

This vegetable bake is fast and easy. Use any soup mix you’d like or simply season it to your liking and change things up. I didn’t use soup mix this time and just tossed basil, Parmesan cheese some pepper and garlic on it. Great summer dish!

Ingredients

1 envelope soup mix (onion, garlic mushroom, even ranch dip would work just don’t use full package)

1/3 cup grated Parmesan cheese

1 medium sized eggplant peeled and sliced

1 medium zucchini sliced

1 medium yellow squash sliced

1 large tomato

2 tablespoons butter

Oven 375F

In a small bowl mix up the soup mix and cheese. Spray a baking dish or drizzle with oil. Lay the vegetables starting with eggplant and sprinkle each layer with the soup mix topping off with tomatoes and remaining mix. Cut butter up and place on top of vegetables. Cover with foil and bake for about 10 minutes. Uncover and make for an additional 10 minutes or until all vegetables are tender.

This is also very good cooked on the grill! Instead of using a dish, place everything on foil, then seal up and grill till vegetables are heated through.
