Turkey Smoked Beans

This is an easy meal to put together at the start of the day and have it ready when you are ready to eat dinner. My best meals are throw together and even the ones that take so little preparation or ingredients. You can also mix this up and toss in whatever you like. I used left over vegetable pieces to make a better seasoned taste and also used a smoked turkey neck. You can sub the turkey for ham, even bacon, even chicken if you like. The purpose of this is to use the bone and left over meat to get the flavor. By the time it’s done cooking the meat has fallen off the bone, the flavor is full and you have a heart warm bowl of beans.

Ingredients

1 bag of white beans (16oz)

1 package smoked turkey neck (or left over ham bone with meat still on it, chicken bones with meat,)

1 medium pepper of each color, red, green, yellow, orange. Diced up small. (if you already have frozen peppers measure out a cup and a half and no, you don’t have to thaw them)

1 large onion diced

3 garlic gloves minced

2 celery stalks diced up

Water

Pepper to taste

 

Directions.

Soak beans overnight. In the morning, sort and rinse, place in large pot. Take your smoked turkey neck and place it in the middle. Drop In your vegetables including the garlic into the pot. Cover with water with about a inch above the beans and set on medium until it boils. Once it boils turn down and keep at low for 3-4 hours or until beans are tender.

This can be done in the slow cooker, simply toss it all in there and set on low all day. I love making this for a side dish, but it can also be a meal, my kids enjoy it with bits of ham cut up in it. Whatvever piece of meat/bone you put in there to cook, the beans come out with that flavor and it’s never failed me! Enjoy!

  6. That sounds easy and looks tasty. My children would love that. Actually the youngest would probably only eat a couple of bites because she likes to be difficult. She’s probably eat all of the chicken out. LOL… Beans are a favorite in our house. 🙂 Great cold weather meal.
