I was in a rush the other day to get dinner done and threw together a last minute stir fry. Didn’t even have the right ingredients, like peppers (how could I not have peppers?) We all have these days, but you don’t have to worry, stir fry is like another one of those dinners you can throw almost anything at and it’ll come out great. Play with flavors and have fun with it! I used this simple quick recipe this past week.
Stir Fry-
1/3 c. chopped onion
1 clove garlic, crushed
1/3 c. soy sauce
2 tbsp. oil
Chicken tenders or beef strips
Vegetables to add (you some, all or what you have on hand. )
2 cups sliced carrots
2 cups beans, or broccoli
2 cups cauliflower or cabbage
2 cups cut peppers
*I used asparagus and peas it was all I had on hand.
1 tablespoon butter
Drizzle of oil
2 cups cooked Rice
Combine onion, garlic, soy sauce, and oil. M ix well. Put your meat in the bowl and let it sit for about 30 minutes. Cook your meat in a pan until tender using the extra mixture to coat as you cook. When they are halfway cooked add in you vegetables and cook to your liking. Chicken should no longer be pink inside, and beef should be cooked through. Arrange meat and vegetables over rice and serve hot.

I love stir-fry. It is one of my specialties! It is easy to make and relatively healthy (always a plus)! If I am feeling adventurous I enjoy getting out the wok and making Kung Pao Chicken.
