I am sure that everyone has a favorite recipe that they absolutely love. I will admit that I used to not really be much of a Butterscotch fan until I was pregnant with my first child. This has forever been a family recipe, but I was never really a huge fan of it with the butterscotch until that time.
1 pkg. yellow cake mix
2 eggs
1/3 C. vegetable oil
1 8oz. pkg. cream cheese
1/3 C. sugar
1 tsp. vanilla
1 cup butterscotch chips
Mix dry cake mix, 1 egg and vegetable oil until crumbly–I add 1 TB water to make moist dough–reserve 1 cup for topping pat remaining crumb mixture into ungreased, 9×13 pan. Bake for 15 minutes at 350. Beat cheese, sugar, 1 egg, and 1 tsp vanilla until light and smooth. Stir in Butterscotch chips. Spread over baked layer. Sprinkle with reserved crumb mixture. Bake 15 minutes longer. Cool before cutting. Makes 3 dozen bars.
***A wonderful alternative option for this recipe is to use a Fudge Cake and Chocolate Chips instead!
