It’s summer and it’s hot hot hot! Nothing beats good old lemonade to beat off the heat during a heat wave. Why not kick it up a notch and make some ice pops at the same time? It’s easy, all you need is reusable popcicle containers and you are set to go! I picked mine up at the dollar store believe it or not, great bargain and really once you get them you’ll wonder why on earth you never thought of this before. While you can pretty much put any of your favorite juice inside why not make some fresh lemonade to enjoy? It’s super easy to do and you will have enough to make ice pops and sip some cool lemonade at the same time!
Ingredients
2 cups sugar
1 cup hot water
2 cups fresh lemon juice
1 gallon cold water
Directions
Mix the sugar in the hot water and stir till it’s all dissolved. Pour in the lemon juice and cold water into the large pitcher. Let it chill and stir making sure the sugar really dissolves, sometimes it settles on the bottom. Prepare your Popsicle containers and give a good stir to the lemonade again before you start pouring it into the popcicles. Repeat till you finish and chill the remaining mix for sip lazily on a hot summer day!
I make Strawberry Lemonade by simply crushing about a cup and a half of strawberries straining carefully then mixing into the lemonade as directed above. Makes a great popcicle as well and the kids enjoy it. You can also garnish each with springs of mint for drinks or crush up and let the mint sit in the drink and making that into a popcicle as well. Other are ideas are, crushing up blueberries to make blueberry lemonade, you’ll need about two cups blueberries though and I’d cut the lemon juice down a bit. Depends on your taste so always sample as you make before adding all ingredients!
