This is a great recipe to use with any left overs really. Easy during the holidays as well. You’ve been cooking non stop, have all these left overs, don’t want to cook dinner anymore- so why not use up anything you’ve got on hand to make a healthy meal?
Lettuce takes place of a tortilla or hard shell taco, making it healthier. You pick your meat , anything from pork, chicken to turkey and they your vegetables. This is really a make it your own, mix and match kind of deal .
Ingredients
2 cups cubed cooked chicken ( or your choice of meat)
Romaine lettuce for the taco
Chopped vegetables about 1 cup of each-
Onion
Peppers
Tomatoes
Corn obviously not chopped
Other vegetables you could add are- shredded carrots, zucchini, cucumbers, mushrooms or peas and or beans
Directions
Set up the vegetables in bowls so people can assemble their own taco, you may use more or less which ever. Have everyone make their own tacos and top with favorite cheese. Scoop ingredients and place in the middle of each lettuce. You can serve these warmed or cold, for warm just heat all your ingredients ( not lettuce) and serve right away.
Perfect healthy dinner for post Holiday Feasts! You can top with dressing and make it more of a salad or eat as is, the choice is yours- have fun with it.
