As a Northern girl who loves Southern food a little too much, this was a welcome addition to my kitchen.  Nothing much beats a good pecan pie or batch or biscuits, and  you bet your sweet tea that I love my time below the Mason-Dixon line even if it tends to work my waistband a little bit  🙂 Apparently, I can make some of my favorites at home, and with less calories as well. Who knew?  Read on for more info- then go get this cookbook and start cooking 🙂
Can Southern food be satisfying and healthy? You bet your biscuits! THE SLIM DOWN SOUTH COOKBOOK: Eating Well & Living Healthy in the Land of Biscuits and Bacon, a new book written by registered dietitian and award-winning journalist Carolyn O’Neil, serves up delicious recipes for breakfast, lunch, dinner, and snacks while teaching you an easy-to-follow philosophy for living a healthy lifestyle — without giving up the Southern food you love.

Southern culture certainly tempts with the deviled eggs, layer cakes and all things deep-fried, but Southern food can also be good for you. Peaches, pecans, okra, greens and sweet potatoes fill Southern pantries with good health and great taste. And THE SLIM DOWN SOUTH COOKBOOK also includes traditional dishes with nutritious makeovers. Yes, you can enjoy Pecan Pancakes, Baked Cheese Grits, Fried Green Tomato Sliders, Skillet Fried Chicken, and Key Lime Pie as part of a slim and healthy lifestyle.

Slimming down with THE SLIM DOWN SOUTH COOKBOOK is also as much about the grit and grace as it is about the groceries. Living and eating like a true Southerner can put you on the path to good health and it comes down to four easy “SLIM” strategies that work whether you’re in South Carolina or South Dakota:

·       Savor the South – Discover the healthy variety of Southern foods.

·       Linger Longer – Take your sweet time to enjoy meals.

·       Indulge a Little – Incorporate little splurges that keep you satisfied.

·       Make it Happen! – Use Southern grit and grace to stay the course.
