In Mexico, it feels like summer all the time, and as our winter slowly turns to spring, there are so many ways that we can get inspired by the fresh local ingredients in our supermarkets to prepare some amazing dishes. Whether you’ve been lucky enough to book flights to Cancun or any other beautiful part of Mexico to discover all of the delicious and authentic food the country has to offer, or whether you just get inspired by Mexico’s great array of dishes, there are so many different recipes to try out.
Mexico is one of those lucky countries where most people can shop at outdoor
markets; Cancun has two famous markets called Mercado 23 and Mercado 28,
situated near the beach.
Did you know that corn is a major staple in Mexico, and is much more prevalent
than rice or wheat? Corn forms the basis for numerous Mexican dishes, and you’ll
probably be familiar with its most common form: tortillas. Another pretty basic element
of Mexican cooking is sauces. Most meals rarely come without some sort of delicious
sauce, like salsa or mole.
Not only is Mexican cuisine fun to prepare with little ones, it’s also a good way to
encourage your kids to eat their vegetables, especially when you include guacamole
or salsa. Cooking is seen as a way to bring families together and maintain social
relations, so here are some of our family favorite dishes from this amazing country.
Mole
Easily one of the world’s most delicious sauces, mole is often referred to as mole
poblano outside of Mexico. There are many different versions of this sauce, so don’t
be fooled if you’re looking for a recipe and they all call for different things. The one
ingredient that is always in a mole sauce is chili peppers. A standard version calls for
at least one, if not two types, of chillies, as well as chocolate, cinnamon, bread, and
tomatoes. It’s thick, sweet and delicious, and goes really well with all kinds of meat, but
the most traditional is turkey, followed by chicken and pork. Your kids can help spoon
out their sauce or assist you in mixing up the spice paste. So what are you waiting for?

Tacos
When we think of Mexican food, it would be hard not to think of a taco almost
immediately. With so many different fillings and toppings, tacos are a fantastic meal
to create with your family, especially if you’ve got some picky eaters in your midst.
Let your kids help with the chopping if they’re old enough, and allowing them to stuff
their own tacos is a great way to keep them involved. You can choose from the most
common fillings like pork, but they’re also delicious with seafood (prawns or a light
fish), as well as chicken. As a classic fun finger food, make sure to have lots of napkins
on hand to tidy up after you’ve added the traditional (but drippy) sauces of salsa and
guacamole, as well as the tomatoes, onions and lettuce.

My kids love churros and I remember making something called benuelos when I was a kid. My husband’s favorite is definitely the street vendors in Tijuana shaving meat off the spit for mini tacos.
My kids love tacos, my husband loves taco pizza, and I love burrito bowls. I’ve never tried mole sauce though and now I want to try it!

We love fajitas and eat them at least once a week! Guacamole is a standard food in our house!
