Top Dreamy Summer Travel Destinations

During the spring time I like to dream a little about what places I would travel and the outfits I would
wear there if budget was not an issue. Would I head to Scotland and view the castles? Or would I
head back to Paris, France, and explore the rest of the Louvre? With so many places to explore, the
travel destinations are limitless. If I do get to go to one of my favored travel destinations, there’s no
doubt I’ll be dressing fashionably. Plus – I plan on saving some money with coupons, of course.

Paris, France

Since I haven’t been to Paris, France since I was 16 years old, I’m sure things have changed since
then! Plus, who doesn’t want to go to Paris? I’d love to go back to this historic and beautiful place,
and surround myself with their culture and history. In particular I’d love to visit the palace, which
has rich history that spans from the medieval period all the way until now. I’d also love to walk in the
Tuileries gardens, which I’m sure are no doubt stunning. And of course I’d love to shop there again –
so many wonderful places to explore!
Cottage Country in Eastern Canada

I’ve never been to Canada, hence why the cottage country sounds beyond lovely. Apparently this
country covers any lake destination and it is easy to drive to for a weekend getaway. Surrounded by
miles of shoreline and 17 historic towns and villages, I can only imagine how beautiful this area must
be. Plus – you’ll find many waterfalls there as well! I’d also love to explore the Riverwalk and the
shops of Canada’s waterfall capital, Bracebridge. Sounds Beautiful!

Myrtle Beach, South Carolina

And just for the sake of staying in the United States, I think I would love to head to South Carolina.
For one, my friend lives there and I haven’t seen her since High School. Another reason? I’d love to
visit the new 55-acre Hard Rock Park, which is quoted as the “world’s first rock ‘n’ roll theme park.
It’s in Myrtle Beach and has nightly fireworks set to the Queen’s “Bohemian Rhapsody.” Plus – I’ve
read that the hotels are offering great discounts on their suites! Sounds like fun to me.

There are many other locations I’d love to visit and a girl can dream, can’t she? For now I’d be happy
to just go to one of these destinations during the summer time – if I can convince my boyfriend to go
with me. But that shouldn’t be very hard to do. Whatever summer adventures take place for me, I’m
sure they will be dreamy and well worth the wait!

Bronx Zoo Animal Tales Extravaganza

Animal Tales Extravaganza returns to the Wildlife Conservation Society’s Bronx Zoo for the third year, on weekends from Saturday, April 21 through Sunday, June 30. And Animal Tales Extravaganza is included with your zoo admission!
Each weekend of Animal Tales Extravaganza includes an array of activities for families and children. The zoo’s Dancing Crane Pavilion will be transformed into an intimate story time corner, presented by Plum Organics. Zoo-goers can take a break and read from a wide variety of animal-themed books from Simon & Schuster, Candlewick Press, and Hyperion. Children can then stage their own animal tale with a puppet they create at the Bright Horizons Early Education & Preschools crafts area.

In addition, this year features a special production – Avenue ZOO – featuring a guest appearance by Kate Monster, the beloved puppet star of the Tony Award-winning musical AVENUE Q.
Running each weekend on the zoo’s Asia Plaza Stage, Avenue ZOO highlights the importance of wildlife conservation in a fun, entertaining way. It is a musical tale in which Kate Monster meets exotic animals and discovers that though they may seem strange and different, they are not as scary as she thought. Avenue ZOO performances will be at 12:30 and 2:30 p.m. each weekend from Saturday, April 21 through Sunday, Sept. 9.

Easy Beef Enchilada Recipe

With Cinco de Mayo this weekend you’ll want to make this easy Beef Enchilada dish. This recipe may look like it takes up a bunch of time, but it really doesn’t. Once you make your sauce and cook the beef it goes fast. My kids think the sauce is just a little spicy but after they dump more cheese on it they have no complaints. You can easily substitute canned sauce or your own favorite sauce if you’d like. You can cook this with shredded pork, chicken even turkey if you’d like as well.
Beef Enchiladas
Ingredients
1lb ground beef
1/2 cups chopped onion
1/4 teaspoon pepper
Enchilada Sauce- recipe below
8-12 corn tortillas (6-7 inch)
A cup of sliced Black olives for topping
2-3 cups shredded cheddar cheese
Sour cream for serving – optional

Directions
*Cook your sauce first
Spray 9×13 baking dish with cooking spray
Preheat the oven to 350F. In a large skillet cook onion and brown beef over medium heat until beef is no longer pink. Pour off grease and season with pepper. Stir in about 1/2 of the enchilada Sauce and turn off heat. Pour A little sauce in your prepared pan just so it coats the bottom of the pan.
