Pack Up and Head To South Carolina

If you are looking for a quiet spot to spend time as a family, where time seems to slow down but there is still plenty to do when you are feeling active, take a gander at Beaufort, South Carolina.  This sleepy town is so picturesque that Hollywood has used it as the backdrop for such films as “The Prince Of Tides” and “Forest Gump”, and while there are many lovely cafes, bakeries, chocolateries, coffee shops, and restaurants in the district, you won’t find a Starbucks or a McDonalds in town.  Welcome to beautiful Beaufort.

Take a tour of the downtown area in a horse drawn carriage- Southern Rose Buggy Tours offers them with a covered top to protect you and yours from the Southern sun.  The tour guide and driver know the area inside and out, telling you all about not only historical landmarks and homes that you pass, but also stories and legends that go hand in hand with history (both modern and long past).  There is an amusing anecdote related to Barbara Streisand and the local Marines that is sure to have your group laughing- make sure you ask what “the sound of freedom” is if your guide forgets to tell you.  Each tour lasts about an hour, and if you bring peppermint candies along, you will be able to give the carriage horse a treat.

Cruise around the area with Captain Dick River Tours on the Prince of Tides sightseeing boat, where you will often see dolphins, cranes, and other wildlife as you tour the river. The daily hour and 15 minute tour leaves the Downtown Marina at the Beaufort Waterfront Park at 2pm, all seats are $24 (no charge for infants).   The kids will love to see the local fauna, and mom and dad will also enjoy hearing about the historic homes, celebrity sightings, and filming stories.  There is also a 2 hour sunset cruise option two days a week (seasonally) Tuesday and Saturday evenings.

After you are done exploring the downtown Waterfront Park and Playground, make a quick stop to Southern Sweets Ice Cream Parlor.  The kids will be thrilled with any ice cream stop, but this old fashioned ice cream parlor will be a hit with everyone.  Complete with soda fountains, hand dipped ice cream, and marble table tops, you can get anything from an ice cream cone to a banana split to an egg creme and more.  They also have home made brownies and pralines, a must try.   If you feel that your sweet tooth still isn’t satisfied, and perhaps you’d like a unique souvenir to take home with you, make sure you pay a visit to The Lollipop Shop.  Not only do they carry every kind of candy (and sweet beverage) you could desire- even the hard to find, old fashioned or “retro” stuff- but you can buy your candy in many ways.  By the piece, the pound, the box, or the stuffed animal.  You read that right- you (or your child, should you feel so  generous) can choose from two sizes and about two dozen styles of stuffed toys, which come “hollow”, so to speak.  You then stuff your toy full of candy from the baskets in the store, and when it’s full, they close it up, name it, and give you a “birth certificate” for your new buddy.  They also give you a box of stuffing to take with you, so that when the candy is eaten, you have a soft and cuddly toy to keep forever.  This was nearly everyone’s favorite find, and one that we will surely visit again next time we are in the area.

Blackened Catfish Recipe

This is a simple quick meal for the family. If you season just one side of the fish you can save the left over seasoning, or if you have more than 4-5 fillets this will easily still work just season one side if you use more than the pounds that’s called for. I made this with pan seared asparagus, just place a tablespoon of butter in a skillet ( cast iron is best)  melt the butter on medium high heat keep  it that warm and toss the asparagus in. You want to keep the greens moving so it won’t burn, it will turn a real nice bright green and go tender when finished. Sprinkle with pepper then transfer to plate. It will only take 5-10 minutes not even sometimes depends on how thick the asparagus is.

My First Month On Nutrisystem

Week four on Nutrisystem, and I lost 2 more pounds.  It’s not last week’s 6 pounds, but hey, it’s a weight loss, so I will take it!  What’s funny is, I actually made it to the gym more then I did the week before and I feel better- but didn’t lose as much weight- go figure.  I will take what I can get, and keep on working hard.

I will confess that we had a barbeque on Mother’s Day and I ate that for dinner instead of Nutrisystem, but I was careful with what I ate (I didn’t eat the hamburger buns like a weirdo, no mayo on anything, and things like that) so I did my best to eat better even though it wasn’t a pre-packaged meal.  Hey, life isn’t pre-packaged, we all have to learn how to eat well as well as follow the diet- and I think I did both well this week.  Now, if only the scale concurred, LOL.

Meeting Kristi Yamaguchi and Finding Alpine Lace’s Perfect Match

Yesterday, I was able to “Dine, dance and discover” with Kristi Yamaguchi, the Alpine Lace Deli Cheese brand spokesperson in New York City.  At this event, we chatted about family life, what matters most to each of us, and the things that make out days that much better.  We also tried out some fun and delicious pairings with Alpine Lace cheese, and learned some dance steps.  Yep- we tore up the dance floor.  OK- maybe there was no actual “Dance Floor”, but life is what you make of it, ay?  We were dancing, it was a dance floor!  🙂

Kristi Yamaguchi (who was on the TV Show “Dancing With the Stars”) even gave us a performance of the Rumba steps to inspire the wallflowers among us.

At the Perfect pairings station, we spoke with the Alpine Lace test kitchen expert, who showed off a variety of food and wine pairings that go great with Alpine Lace Swiss. Some examples are chocolate, strawberries, crackers, cucumbers, and mortadella.

Hasselback Baguette

Yield: 3-4 servings

INGREDIENTS:

2 Tbsp oil

1 small red onion, diced

1 red bell pepper, diced

½ tsp dried basil

¼ tsp kosher salt

  • pinch coarse black pepper

1 (24-in) baguette

  • shredded cheese

EQUIPMENT:

3 long wooden skewers

 

INSTRUCTIONS:

1. Preheat oven to 475°F. Line a baking sheet with parchment paper.

2. Heat oil in a sauté pan over medium heat. Add onion and sauté for 3-4 minutes. Add pepper and sauté for an additional 3 minutes. Season with basil, salt, and pepper.

3. Cut off the ends of the baguette; discard ends or reserve for another purpose. Slice baguette into 1 ½ inch thick slices (you should have about 15 slices). Slit each slice through the top, leaving the lower end uncut.

Battle of the Greek – 100 Strawberry Yogurts

Across the country there are taste tests going on between two rivals, in one corner Yoplait Greek 100 Strawberry yogurt and in the other Chobani Simply 100 Strawberry.  So with these taste tests going on why not hold one of our own?

pic9The first step was easy, supplies.  I went over to the local supermarket and grabbed a few of each contender.  It was test time.  Next up my ‘guinea pigs’, I invited a few friends over and laid it out for them.  These two yogurts are the same type, same flavor, also both were served in the same way.  Both yogurts came out of the fridge at the same time so their temperatures were the same.  Once scooped out both servings were the same as well.

I am almost done with my first week of Nurtisystem.  I can’t say it was a success, but that’s my fault- I was on a trip, so it was not the best time for me to start a diet.  Next week I will be away as well, but then I will be home for a bit and better able to stick to a diet when near my own kitchen, haha.   Plus I will be back at the gym- I’m a girl that loves being on a schedule, so I know it will be better for me when I am back.  Being a carb-queen, there is a lot to get used to, a very different way of eating.  Lots and lots of veggies, dairy is OK to have as well for some things (and variety) and a lot of water.

You get your food in the mail- breakfast, lunch, dinner, dessert.  This, plus you can eat veggies, fruit, some dairy and proteins.  Everything but some of the veggies are in small, weighed, or measured quantities.  This is tough at first, but will help you with portion size and control in the long run.  Remember- we didn’t get overweight because we DON’T like to eat, am I right?
