Hot Roast Beef Melt

With Mother’s Day this weekend I wanted to come up with something really great for you ladies. It wasn’t easy though. It was a toss up on something sweet or a special dinner which got me thinking – I always end up cooking one way or another on that day, so what’s a Mom to do on her own special day? Cook something that requires very little work , that’s what! I came up with a two version meal, you can either serve hot with sides as a full rounded meal or cut the trimmings and make it a fun lunch which is what I did. Wanted fun, melt in your mouth taste that didn’t require much of my time. Here is what I came up with-

A Hot Roast Beef Melt, which was made from a pot roast dinner.

It’s a party in your mouth kind of sandwich !
Slow Cooker Beef Pot Roast

Ingredients
1 cup of sliced mushrooms
1 cup of chopped bell peppers , either green or red even both if your feeling up to it!
6 tablespoons ketchup
1/4 cup water
1 -2 tablespoon Worcestershire sauce
1/2 teaspoons black pepper
1/4 teaspoon salt
2 pounds boneless shoulder pot roast
Directions-
Coat a slow cooker (about 4 quart size) with cooking spray. Place your mushroom and bell peppers in a coated slow cooker. Combine the ketchup, water, Worcestershire , pepper and salt in a small bowl and mix to combine. Enjoy Every Moment At #VirginiaBeach

What family can’t use a little more together time? This time of the year, everyone is thinking about travel, and one of the coolest places to be is Virginia Beach. Virginia Beach is a fun place to be for the whole family- close, exciting, and won’t cost you an arm and a leg to spend some time on a family-friendly beach.
There are so many things to do in Virginia Beach that your time will just fly by, leaving you wishing for “just one more day” of vacation.

There is a wonderful aquarium with a great Imax theater, the Virgina Aquarium and Marine Science Center. There are several shows available daily, including “Born To Be Wild” (which just sounds adorable). Coming up shortly is the “Sensible Seafood Fest”., which begins Thursday, May 24th 6-9PM. There you can sample food and wine from local vendors and learn about sensible seafood. Fun and environmentally friendly!

On a sunny day, you know you want to hit the beach, the pool, and all things water-related. Virginia beach has amazing water activities available, like sailing, fishing, and of course- Pirate Adventures! Yes, you read that right. Your kids will love Captain Jack’s Pirate Ship Adventures, where they will hop aboard and search the high seas for treasures.

May 19, 2012 is “National Learn to Swim Day”. Learning to swim is very important to children. In everyday activities, it greatly expands the amount of fun places to go during the summer which is just about upon us. Knowing how to swim can save your life or a loved one’s life. According to the Red Cross, drowning is the second leading cause of unintentional injury-related death for children ages 1 to 14 years old. Additionally, statistics show that children ages 1 to 4 drown most often in home swimming pools. These are some scary statistics to look at. Especially if you now take a stroll around you neighborhood and see how many of your neighbors have swimming pools. Sure they have fences, but we all know a group of kids will always find a way to get into trouble, so why not help them stay safe, too?
