Chocolate Mousse Recipe

In the mood for a quick and easy dessert?  If you are like me, you are all about chocolate.  And things that don’t take a whole lot of time to make.  This is super quick, and everyone will love it.

Ingredients

4 egg yolks
1/4 cup sugar
1 cup whipping (heavy) cream
1 package (6 ounces) semisweet chocolate chips (1 cup)
1 1/2 cups whipping (heavy) cream
Whipped Cream
Chocolate Sprinkles

Directions

  • 1 Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar.

There are many addictive items in life.  These come in many different forms, most of which can destroy a person body adn soul.  But there is one addictive substance which never lasts long in our house, delicious snacks.  Delicious snacks are usualy crunchy and either salty or sweet.  One of the most recent cases of, “oh my I think i ate the whole box.”  Have been CheeseSticks by John Wm Macy.  These delightful snacks are crunchy cheesey or sweet treats in the form of triested sticks or bite size portions.  both of which seem to disappear soon after the box is opened.  These treats come in three forms and many flavors.

Great Snacks for the Whole Family

The first is the original form: CheeseSticks.   These started out with original in 1985 but are now available in a variety of flavors including Cheddar and Scallion, Garlic Romano, Dijon Swiss and Melting Parmesan.  All have a wonderful real cheese flavor which you can smell and taste.  When twisted with the sourdough these snacks are unique in their simple yet robust flavors.  All flavors are good and it is very difficult to picka  favorite although as of now we lean toward Cheddar Scallion.

Cookbook: Vegan Slow Cooking For Two or Just For You

As a former vegetarian who at one time dated and lived with a vegan, I have learned to appreciate meatless meals. I also have a small family of just three of us, so I was excited to test out the book, Vegan Slow Cooking For Two or Just For You by Kathy Hester.

Vegan Slow Cooking For Two or Just for You is full of everything from entrees to side dishes and even sauces to accompany many meals.

The Good:

Vegan Slow Cooking For Two or Just for You has beautiful photos. For me, as a chef, I was taught we “eat with our eyes first”, so this is one of the most important aspects any cookbook can have. The photos really made my mouth water and my husband came in and peeked over my shoulder and didn’t even know it was a vegan cookbook.

I liked that the book also included tips for using a slow cooker as well as an explanation of some new ingredients that may not be familiar to many home cooks. There was also a section on tips for cooking for small families in general as well, which I found very useful. I think this book would be great as a wedding gift!

Book Review: World Food Cafe Quick and Easy

As a chef, I love to cook interesting foods from around the globe, even if my less than adventurous family isn’t so excited about eating them. World Food Cafe Quick and Easy:Recipes from a Vegetarian Journey by Chris and Carolyn Caldicott gave me to opportunity to try my hand at foods that I may have never tried.

The Good:

I was absolutely enthralled with the beautiful and often breath-taking photos in this book. I found that the richness in colors of not just the recipes, but the people and landscapes that are from the regions the recipes come from really made the book not only something to instruct readers on how to make e=worldly foods, but also made the book quite a conversation piece. The book is full of information and introductions describing each region and country and the people’s way of life. This book reads more like a travel book with a few recipes thrown in and is a great way to get to know historically why the foods used in the recipes are so important to the people’s culture.

Seattle’s Best Coffee

A good cup of coffee makes the whole day start well.  Waking up to a pot of brewing coffee has to be one of the best ways of waking up.  Coffee in our house is an odd story.  We started out as casual drinkers, meaning if it’s there we will have it.  This is usually at family functions like dinners and such, or if someone else wants coffee.  But this slowly changed into something more.  Now coffee is made every day, and at least a cup each.  Coffee in our house can last a long time or if it is good, a very very short time.  Dad usually enjoys a dark full flavored roast, black and sweet, but no milk (he likes it hot and bitter, just like Mom, lol).  Mom enjoys a sweeter approach to things, unlike in the rest of life (light and sweet, like Dad!).   Mom also gets wicked migraines, and the caffeine helps take the edge off.  True, this won’t work for everyone, and sometimes caffeine is the kiss of death for migraine sufferers, but for me?  Lifesaver. We both are quite different with what we enjoy, though we both like the odd brew every so often and like trying something new.  Luckily enough we were recently introduced to Seattle’s Best Coffee.

There are a variety of cabins available, depending on how many in your party.  The cabin we stayed in had a pull out couch in the oversized living room as well as a large (very large) back bedroom with two beds.  The living room was complete with all that one could desire in a comfy, woodsy cabin, including a working fireplace and kitchenette.  With 35 cabins to choose from, all nestled in the heart of a lovely and aromatic pine forest, you and your family will have both seclusion and a sense of community here at Migis.  (Think “Dirty Dancing”, but in real life.  And without Patrick Swayze, LOL.)

Once you have dropped the kids off for evening activities and dinner, you can dress up and have some adult time.  Cocktail hour starts your evening of relaxation off with a menu of wines and delicious cocktails.  It is the perfect start to the evening.  I highly suggest the specialty cocktails, one made from prosecco and fresh fruit was a fresh, light drink that went well with the accompanying assortment of cheeses and fruit available. After you have moved into the beautiful dining room that boasts huge windows that open up to a view of the trees and lake, you can begin to decide on what to choose for dinner.

Thick’n Creamy Chicken Soup

 

This is a very creamy thick soup and full of comfort. I’ve had a rough week and it’s been mainly soups around here. Soups just speak comfort and this is a favorite one of mine. You can do this in the slow cooker if you wanted, make the roux in a pan and add it into the slow cooker with all the other ingredients then just have it cook all day long. Add in any left over vegetables you have on hand , you can easily throw in mushrooms which is pictured above. Also asparagus works wonderfully!

Quick Start Homemade: Book Review

I was sent a copy of Southern Living’s Quick Start Homemade to facilitate this review. All opinions are my own.

It is not very often that a recipe book comes along that contains so many easy and budget friendly recipes in it that I had a hard time choosing which to try out for the review. Quick Start Homemade by Southern Living was such a book.

Quick Start Homemade features recipes that are hearty and delicious. The book allows you to make all the recipes using commonly found ingredients and cooking techniques that are fitting for just about any level home cook. The book contains 101 recipes for commonly made home-style meals with an extra spin on them to break up the ordinary.

 

The Good:

The book included a ton of great photos. I was always told in college when I went to culinary school that the #1 rule of food presentation was “You eat with your eyes, first”. This book gets that. The pictures are bright, bold and you can practically smell the recipes through them.

I enjoyed how the book broke down meals into colored sections so you could easily find the section you were looking for. These were broken down into categories such as pasta, pizza, eggs and so on. There were not only dinners in it, but also great dishes for lunch and brunch.
