Bacon and Onion Squash Sauté

Server this quick and easy side dish straight from the skillet.

3 hickory-smoked bacon slices

3 cups sliced yellow squash (¾ lb.)

¾ cup chopped onion

¼ tsp. table salt

¼ tsp. freshly ground pepper

¼ cup (1 oz.) freshly shredded Parmesan cheese

1 tsp. chopped fresh thyme

1. Cook bacon in a large skillet over medium heat 5 to 7 minutes or until crisp; remove bacon, and drain on paper towels, reserving 1 Tbsp. drippings in skillet. Crumble bacon.

Uniquely Greek Dips and Spreads

There are lots of options out there for snacking. Each with their own unique qualities to them. One of the most recent trends in snacking has been Greek foods. These foods show up in dips, as ingredients in snack bars, even on sandwiches in the form of Greek yogurts and Feta cheeses.

pic3Dips are particularly interesting because they can be used in a plethora of recipes. One such dip we will be looking at his particular favorite of mine, Uniquely Greek. Throughout their products the commonality is Feta. Each of their spreads revolves around the theme of a delicious easy to use spread with simple natural ingredients. As of now there are 4 varieties, Fire Roasted Red Pepper which has cream cheeses, feta garlic and fire roasted red peppers, this is not spicy in the slightest and adds a great flavor to recipes. Up next is the Simply Spinach, which is one of the original flavors developed by Uniquely Greek’s creator Jessica Gill owner of Grecian Delights in Boothwyn, PA. Next is the spicy one Spicy Buffalo which packs a Buffalo wing punch and is full of wonderful flavor. And last but not least is the Imported Kalamata Olive flavor which is a wonderful combination of olive cream cheese and feta to make a delightful spread that goes perfectly on crackers and other crunchy delights. Each of the dips is unique in its own regard but can all be used as dips, sandwich spreads, slathered on a grilled meat. There are tons of uses for them. Strawberry Delight Cookies

I absolutely love to cook and bake. I love it even better when I make something that my girls can help with and love eating. The Strawberry Delight Cookies are a huge win in this house.

1 Box Strawberry Cake Mix

1 8oz. container Cool Whip

1 Egg

1/3 C. Powdered Sugar

  • Preheat oven to 350 degrees
  • Mix together Cake Mix, Cool Whip, and Egg. (Will be very sticky)
  • Drop by the spoonful into a bowl of powdered sugar and roll until well coated.
  • Place on lined or greased cookie sheet and bake 10-12 minutes.

Grilled Bleu Cheese Burger on Multi-Grain Flatbread

Kontos Multi-Grain Flatbread
1 lb. chopped meat for four burgers (80-85% lean)
6 oz. mushrooms, sliced
1 small onion
Salt & pepper
6-8 slices of Bleu cheese (or other favorite cheese)
Chilled lettuce or tomato for topping

  1. Using a cast-iron grill-safe skillet, sauté mushrooms and onion in olive oil on hot grill.
  2. Grill ¼ lb. chopped meat, per person, to taste.
  3. As burgers are getting close to ready, place a few slices of Bleu cheese – or another favorite cheese – on your burgers to melt.
  4. At the same time, preheat 1 slice Kontos Multi-Grain Flatbread (or other favored Kontos flatbread or pita) for 15-20 seconds on each side. Cut bread into two halves.

Uniquely Greek Kalamata Olive Feta Spread

Uniquely Greek Summer Recipe:
Greek-Style Six- Layer Party Dip
Prep Time: 10 minutes Servings: 8

Ingredients
8 oz container Uniquely Greek Kalamata Olive Feta Spread
2 plum tomatoes, diced
1/2 red onion, diced
1/2 lb feta cheese, crumpled
8 Kalamata olives, pitted and roughly chopped (To save time, buy pitted olives)
Dried or fresh oregano
For a spicy experience, add 1/4 cup of roughly chopped jalapeño or pepperoncini peppers

Tender Double BBQ Burgers

Today we are going to celebrate the arriving grilling season with a recipe for double BBQ burgers.  These tender burger will hold up on the grill and be moist and delicious for your guests.  They get the double BBQ because not only are they topped with the delicious ingredient but this same nectar of the grilling gods is an ingredient in the burgers themselves, so fire up the grill and get ready for some awesome.

Double BBQ Burgers

1 lb ground beef(or turkey or chicken)

1 egg

1/4 cup bread crumbs (seasoned or not either are fine)

1/2 cup KC Masterpiece Original BBQ sauce (you will need a full bottle the rest is used by your guests)

The morning of your BBQ be sure to defrost your meat safely.  In the fridge sealed up nicely to keep the dripping to a minimum.

Blackened Catfish Recipe

This is a simple quick meal for the family. If you season just one side of the fish you can save the left over seasoning, or if you have more than 4-5 fillets this will easily still work just season one side if you use more than the pounds that’s called for. I made this with pan seared asparagus, just place a tablespoon of butter in a skillet ( cast iron is best)  melt the butter on medium high heat keep  it that warm and toss the asparagus in. You want to keep the greens moving so it won’t burn, it will turn a real nice bright green and go tender when finished. Sprinkle with pepper then transfer to plate. It will only take 5-10 minutes not even sometimes depends on how thick the asparagus is.
