Eggplant Parmesan

meal1

This is a great family dinner that really doesn’t take much time to prepare. The most work comes from slicing, breading and baking the eggplant pieces but that only takes about fifteen minutes of your time before you assemble then heat the dish in the oven. My kids love this so much I rarely have left overs, and the best thing about this whole dish? It’s meatless!

Ingredients

3 beaten eggs

About 3 cups seasoned bread crumbs

3 eggplants cut into 1 / 4 slices. I do it length wise.

1 -1 / 2 cups fresh cut mushrooms

1 teaspoons Italian seasonings

2 cups shredded mozzarella cheese

2 cups spaghetti sauce

Directions

For the eggplant- Place beaten eggs in a shallow bowl, bread crumbs [Read more…]

I most definitely always seem to be on the lookout for the perfect purse. I’m pretty picky about specifics of the purses I use, so I don’t always find one that I like. I do admit that when I finally find the one I like, I typically keep it for a very long time. I am happy to share with you my new Tori Purse in Natural Linen from Velvet Pepper.

About Velvet Pepper:

Stacee Sparrow and Brittany Andrus started out with a dream for women everywhere. They had an idea that modern women, especially mothers, should be able to experience the luxurious fabrics and classic designs of fashionable handbags without sacrificing the functionality of diaper bags they so dearly require in our on the go society.

These bags can function as purses or as diaper bags for the on the go moms out there.

About Tori-Purse Natural Linen:

The Tori lin is a designer favorite and is at the heart of the posie collection. It’s the perfect purse because it isn’t too casual or too fancy. It can easily adjust and work for both types of environments. It definitely represents a girl that everyone wants to be around. Each Tori purse is truly customized because you get your choice of 5″, 6″, or 7″ posies. This purse is definitely small enough to be efficient [Read more…]

Fairy Hobmother – I was Visited

The Fairy Hobmother is a mysterious creature who hails from Twitter. This wonderful creature brings joy to the blogosphere. This joy is spread not only through a happy little Hobmother character, but also with gift cards, Amazon gift cards.

hobs

The Hobmother is a bit like tooth fairy, but in a grander more digital scale. Good little bloggers who work hard and leave good posts and writing under their pillow (or the internet) are left with a surprise when they wake up in the morning (when the post goes up). The surprise is: a gift card code for Amazon. Hooray, much better then a quarter if you ask me.

In order for the hobmother to spread its joy, bloggers must know about it. So the key component to the mythos is spreading the information. A blogger must tell their readers about the Fairy Hobmother and also give a nod to the Hobmother’s [Read more…]

How to Setup a Coupon File (Couponing 101)

how-to-setup-a-coupon-file

The following is a guest post by Outside the Box Mom:

Is the Coupon File Method for Me?

The advantages of using a coupon file are that you have most of your coupons at your disposal, can take advantage of unadvertised deals, and you can carry more than one (or purchase a larger one) for more storage. The disadvantages of using a coupon file are the time required to clip and file all coupons, and the time required to remove all expired coupons.

The first way I used to organize my coupons was with a coupon file. For my current season of life, I prefer the whole insert method as the pro’s outweigh the con’s. As I said in the last tutorial, I have only used a coupon file and the insert method. Here is how you would setup a coupon file for the first time.

Supplies Needed to Make a Coupon File

  • Coupon file (13-pocket file at Staples for $3.99; smaller file at Dollar Tree for $1)
  • Pencil pouch
  • Calculator
  • Scissors
  • Pen

I would estimate that all supplies would cost approximately $5.

How to Set Up a Coupon File

  1. The most important step is to include your name and contact information on the inside of your file, in case you leave it somewhere.
  2. Create a label for each of your categories (dairy, [Read more…]
