Individual Apple Crumbles

Ingredients:

4 cups peeled, cored, sliced apples
1/4 cup water
3/4 cup all-purpose flour
1 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup softened butter
2 cups rolled oats
1/2 tsp nutmeg
1 1/12 cups brown sugar

Preparation:

Preheat oven to 350 F and grease or lightly butter an oven-safe 2-cup dish. In a small mixing bowl, combine first five ingredients. Stir well. In a separate mixing bowl, combine remaining ingredients and stir well. Now mix everything together and pour into the greased dish. Bake 40 minutes (in the middle of the oven, not the very top), then turn the oven to high-broil for 2-3 minutes. Turn off heat, but let sit in oven 15 more minutes.  I also added a little bit of extra brown sugar and cinnamon to the top at the end.

This coffee creamer lasts a couple days in the fridge, but is so simple to make, you won’t mind making it more often!

Chocolate Mousse Recipe

In the mood for a quick and easy dessert?  If you are like me, you are all about chocolate.  And things that don’t take a whole lot of time to make.  This is super quick, and everyone will love it.

Ingredients

4 egg yolks
1/4 cup sugar
1 cup whipping (heavy) cream
1 package (6 ounces) semisweet chocolate chips (1 cup)
1 1/2 cups whipping (heavy) cream
Whipped Cream
Chocolate Sprinkles

Directions

  • 1 Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar.

Pumpkin Chocolate Chip Muffins

With Fall here, I am always ready for Pumpkin. I must tell you that I truly am one of those people that could eat pumpkin constantly. I am never afraid to try new recipes that involve pumpkin. This recipe is definitely a family favorite of mine. I love to make them and freeze the extras. I can then pull them out whenever they sound good and let them thaw and eat them just like they are fresh. I will admit that these are one item that I don’t think are truly good until they cool completely. When they are ooey gooey hot/fresh I always am so excited to try one and then a tad bit disappointed. So I try again when they are cooled and am reminded why this is my favorite muffin recipe!

Thick’n Creamy Chicken Soup

 

This is a very creamy thick soup and full of comfort. I’ve had a rough week and it’s been mainly soups around here. Soups just speak comfort and this is a favorite one of mine. You can do this in the slow cooker if you wanted, make the roux in a pan and add it into the slow cooker with all the other ingredients then just have it cook all day long. Add in any left over vegetables you have on hand , you can easily throw in mushrooms which is pictured above. Also asparagus works wonderfully!

Cinnamon Buns

I love making these buns each weekend. The kids like a late breakfast and since this has to rise it’s perfect for making while they are still pulling themselves out of bed in the morning. It’s not hard to make, and be sure to let the dough rise properly. Don’t put it in a cold area, or a hot place, draft free out of reach from little hands and you’ll be fine.

1 1/2 cups warm water

1 teaspoon yeast

1/2 teaspoon salt

2 tablespoons sugar

1/3 cup oil

1 egg

4  cups flour

Filling:
3 tablespoons butter, melted
1/2 cup sugar
2 teaspoons cinnamon
Raisins if you want

In a large bowl, combine water, yeast, sugar, and salt, along with oil and egg, if using. Let sit five minutes. Stir in first cup and a half cup of flour with a heavy spoon. Add more flour a little at a time as needed, stirring until dough becomes too stiff to continue stirring easily. Add a little more flour and begin kneading. The amount of flour is approximate. Continue adding flour and kneading until the dough is smooth and elastic. Let dough rise in a greased, covered bowl until doubled. (about an hour.) Uncover bowl; sprinkle in a little more flour and knead again. Roll out onto a floured surface into an approximately 15 x 8 rectangle.Brush with melted butter.Sprinkle the filling over it, get it right to the edges. Roll it up & seal the edges, cut about 1in (you’ll get about 15 rolls)

How To Make Home Made Caramel Apples

Ingredients
6 apples
Craft or Popsicle sticks
1 (14 ounce) package individually wrapped , unwrapped
2 tablespoons milk

DirectionsRemove the stem from each apple and press a craft stick into the top. Butter a baking sheet. Place caramels and milk in a microwave safe bowl and microwave for 2 minutes, stirring once. Allow to cool briefly. Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set. They can be rolled in chopped nuts for an added touch of flavor (we didn’t, as my son is a “purest” haha).
