Italian Meatballs

This is a quick meal to prepare that will fill the family up. They load the cheese on and I like to add fresh basil to it but no matter what there are never any left overs with it. Makes the messy production of making the meal worth the empty plates after dinner.

1 / 4 cup fat free milk

1/ 2 cup dry bread crumbs

2 tbsp. freshly grated Parmesan cheese

1 / 2 tsp. salt

1/ 4 teaspoons pepper

2 cups of Apples- sliced and frozen
1 cup of lite sour cream
2 Tbsp. unrefined Flour

Rice Broccoli Pot Pie

I adapted this recipe from my all time favorite dish my Grandmother has always made. Lately with spring rainy weather and some colds in the house I needed , hearty, warm comfort foods. This Rice broccoli casserole usually is topped with crackers, but I topped it off with a pie pastry to make a “pot pie” version and added in chicken pieces. My kids loved it!

Slow Cooker BBQ Chicken

For those really busy days or when you just can’t decide on what to make barbecued chicken in the slow cooker should hit the spot! Easy, and little fuss all you have to do is come up with a few side dishes and dinner is complete. I didn’t use a broiler chicken, so it doesn’t matter what kind you have on hand, just adjust your slow cooker to the size. Smaller sizes obviously cook quicker. Happy Valentine’s Day- Chocolate Chip Cake

Need a last minute treat to make for Valentine’s Day? I have just the cake for you! This is so easy to make, quick and not to sweet while nice and chocolaty. My kids and their friends helped make this while they had a play date. It tastes like a soft cake brownie. I don’t frost it because the chocolate chips sweeten it up enough there’s no need. Add a cup a milk with a slice of cake you have a great Valentine’s Day treat for the family!

Stir Fry

I was in a rush the other day to get dinner done and threw together a last minute stir fry. Didn’t even have the right ingredients, like peppers (how could I not have peppers?) We all have these days, but you don’t have to worry, stir fry is like another one of those dinners you can throw almost anything at and it’ll come out great. Play with flavors and have fun with it! I used this simple quick recipe this past week.

Barbecue Beef Chili

I normally make this chili with beef brisket but this time around I only had beef on hand. It comes out great each way but I do prefer the brisket over anything. Great for a busy day you can toss all this into a slow cooker and forget about it till it’s dinner time. Since I’m also a huge football fan, this is a must on Sundays!

Komodo Dragon Cake

100_2363100_2360100_2361First- let me say that I am not one of those people that can just “whip something up”, nor am I a fantabulous baker. This took me a LONG time to do, haha. Not perfect, but hey! (it tasted good, so shhhhh on the non-perfection, lol)

Second- I don’t like fondant. It’s gross. I made icing and covered it with green sugar and dyed green coconut, and it turned out pretty well I think, for a non-master-baker like myself.

What I Used

Two nine-inch round cakes. Cakes made from scratch will be denser and stronger than a cake mix- just be forewarned that the time you save using a mix will be spent cursing during the frosting crumb coat.
